In den Rustwat (IDRW)
This inn, dating back to 1597, with thatched roof, original tiled floor and Delft Blue tiles on the wall, is one of the city’s most refined restaurants (it also has BIB Gourmand approval). In a beautiful location right next to the Trompenburg Arboretum, Marcel van Zomeren prepares dishes “with 100% respect for the product”, such as Dutch lamb cutlets and fillet of lamb with potato salad, black garlic, legumes and sage, and grilled sea bream with a spring roll filled with beluga lentils, scrambled eggs and samphire with tom ka kai sauce. His salad with asparagus, beetroot, flowers from the garden and lavender foam, served on the garden terrace, looks like a painting.
